CHICKEN VEGGIE SALAD

A simple, tasty vegetable salad with grilled chicken!

Serves 1

INGREDIENTS

Salad:

1 grilled chicken breast (cut in cubes)

1 cup spinach

1 small Persian cucumber (cut in thin slices)

2 radishes (cut in slices)

½ cup chopped cilantro

10 pitted black olives (cut in small pieces)

1 small avocado (cut into cubes)

Dressing

½ tbsp. flax oil

½ tbsp. Dijon mustard

½ lime juice

1 garlic clove, crushed

Salt and pepper

Mix all the dressing ingredients until you obtain a consistent paste.

For the salad, mix all the ingredients except the chicken breast cubes. Add the dressing and mix again. Transfer the salad in a plate and place the chicken breast cubes in the middle of the plate, on top of the salad. Enjoy!
